This pan molds quiches, tarts, and cakes with pretty fluted sides. The removable bottom means they come out intact. A quiche of broccoli and sun-dried tomatoes (recipe included) demonstrates how crisply the fluting details emerge. The pan holds 4 cups, enough to serve four to six people. Made of aluminized steel for rust and warp resistance, it's a sturdy pan with a long life expectancy. The nonstick coating ensures quiches, tarts, and cakes pop out intact. --Fred Brack

This pan is very useful for making quiche (this is a good use for using up leftover vegetables for an elegant lunch. Just put the broccoli, zucchini, mushrooms, onions, spinach, whatever you have in the quiche batter with some eggs or egg subsititute, evap milk or cream and maybe some cheese. Pour into the crust and bake. Good with salad or soup.) It's also great for European style fruit tarts, which are less rich with one crust and filled to the brim with fresh or frozen berries, peaches, apples or even filled after baking with tropical fruits like bananas and kiwi.

The false bottom allows you to unload the tart on an elegant serving plate. However, to avoid spills in the oven, simply fill the tart pan on a baking sheet and put the sheet with the tart pan on it into the oven. (European ovens have a solid rack for cake and tart baking that is removable. Since American ovens have wire racks, substitute loading the tart on a baking sheet instead.)

This little treasure is one of the best buys ever - it's simple to use, cleans up easily, and well worth the small amount you'll pay.

This is a great tart pan if you like to make deep dish quiches, etc. The false bottom comes in handy for easy removal of the tart, but be careful when loading it into the oven! While the sides of the pan are non-stick, the bottom is not. The sides and bottom should be buttered well. I would reccomend this pan to anybody who has always wanted to made tarts!

The pan was awesome for the economical price!!! I do agree with a previous reviewer about buttering it up well. I have made a tart every week since it arrived. And now I AM A TART.

Just like other reviewer said, this is more like 9 inches, at the top it goes close to 10. I think it is neither the merchant nor Amazon's fault, the original sticker on the pan says 8in.
